Somehow I never thought about this, but edamame is just a soy bean that is harvested about two months earlier than usual (ie. the yellow form used for miso, soy sauce, tofu, etc.).
It’s interesting, but the name (edamame) sounds very different from
the other ones. I just realized that some foods become softer and sweeter
as they mature, and some do the opposite: harden etc
