Soba – made from buckwheat – is my favorite of the many Japanese noodles. We had cold soba with a few different toppings:
- Grated mountain potato
- Bonito flakes
Along with the soba you get:
- Soba dipping sauce. Not sure what’s actually in it.
- Grated daikon.
The best part: they also serve the water the soba was cooked in. After you finish the noodles, you pour the soba water into the bowl to mop up what’s left and drink it. Nothing goes to waste.
On the way back we walked by some soba fields.

Where there is buckwheat, there must be buckwheat honey – is there any
honey in Japan? or is it too cold for it? and no kasha either?
Not sure about honey, but it’s not very popular here – they might have it, but it’s probably expensive. No kasha at all, they only use the flour.
